Haha...I am glad we all got a laugh out of this weeks media frenzy...you gotta love our DAA (Dietitians Association of Australia) and the British Dietetic Association (BDA) for having a wonderful sense of humour, I wonder what they will say next? Anyway back to sharing delicious recipes....I thought I would share a stunning recipe that would work wonderfully on xmas day, new years eve or any day for that matter. Please tag your family & mates who would love this and share Poached Prawns with harissa and preserved lemon aioli 16 Green wild prawns (or purchase cooked wild prawns) harissa and preserved lemon aioli 1 ½ - 2 teaspoons harissa paste or enough to taste (or any chilli paste that you love or even some cayenne pepper) 250 g aioli (see recipe below) 1 teaspoon finely chopped preserved lemon zest (or zest off one lemon) Cook the prawns (if you are using uncooked ones) in salted boiling water until pink and firm, 2 to 3 minutes. Transfer to a bowl of ice-cold water and leave until the prawns are completely cold. To make harissa aioli, combine all ingredients together in a small bowl and mix until smooth. Peel and de-vein the chilled cooked prawns and serve with harissa aioli and watercress and a big fresh summer salad of watercress or other leafy greens with some fermented vegies too! Aioli 4 egg yolks 2 teaspoons dijon or fermented mustard 2 tablespoons apple cider vinegar 2 tablespoons lemon juice 6 garlic confit cloves finely chopped sea salt 400 ml extra virgin olive oil or macadamia oil freshly ground black pepper Blend the egg yolks, mustard, vinegar, lemon juice, garlic and some salt using a hand-held blender. As you blend, slowly pour in the oil in a thin stream until the aioli is thick and creamy. Season with salt and pepper.
