Happy Friday! This birds were chirping away on the way in today. What a nice way to start the morning. Making it even better is the apple cinnamon muffin and cup of Vilcabamba coffee that I am having right now. Vilcabamba, Ecuador is known as the Valley of Longevity. While I am not sure if the coffee is the reason the locals live such long lives, I do know that the coffee is delicious! For lunch today we have an old favorite: Loaded Baked Potato to go along with Chicken Wild Rice. We hope to see you very soon! Have a spectacular day!
