Health question here: Im making quite a lot of seitan from the gentle chef book and lately there was a question over vitamin b12 Now that question got me wondering whether I am covered by eating large quantities of seitan that include nutritional yeast. Does anyone know if it keeps its b12 once cooked steamed and fried etc😕? Online searches have provided unclear results In the meantime I did buy myself some methyl cobalamin which is the metabolically active form of b12, but if I can switch that out maybe every other days with seitan, that would be my ideal. Im not a big cereal eater by the way with the exception of oatmeal so thats not a reliable source for me🍴
