Healthy yum Lunch for the whole week(2 persons)! This is how you do it; 1kg chicken breast 2 garlic cloves 1 tablespoon chopped ginger 1 tablespoon coconut oil 3 cups chopped kale 350g button mushrooms 330ml coconut milk Coriander Moroccan spice mix Curry, salt, pepper 1kg boiled brown rice 1 kg frozen veg mix 1-Put rice to boil. 2-Cut chicken in cubes and mix with coconut oil, garlic, ginger, Moroccan spice mix, salt & pepper. Fry until just cooked. 3-Remove from pan and fry mushrooms and kale. (I use a nonstick stone dine pan, so no need for added fat to fry in) 4-Start boiling/steaming veg mix in a pot. 5-Strain excess water from chicken before adding it back into pan with the kale & mushrooms. 6-Add coconut milk, chopped coriander & curry, let simmer a couple of minutes. Time to dish it all up! Put 100g rice in each container, divide stir fry & steamed veggies evenly in the 10 boxes. And youre done!
