Home made meat balls with fresh spaghetti. Bit of a change for dinner tonight. Home-made meatballs with fresh spaghetti. We bought the fresh spaghetti at our local supermarket. You really can taste the difference. I used a combination of pork and beef mice for the meatballs. 500g of mince, half a cup of breadcrumbs, 1 teaspoon of dried sage, 1 teaspoon of Mexican spices and 1 teaspoon of black pepper. Mix all together by hand. If it still feels wet, add a little more breadcrumbs and place in the fridge to firm up. For the sauce, I fried one medium chopped white sweet onion with half a dozen cherry tomatoes, a good squirt of tomato paste and a tablespoon of butter. When the onions were soft, I added a jar of (no garlic) Bolognese sauce and a can of crushed tomatoes with onion. Cook on a low heat for ten minutes For the meatballs, form the meat into table tennis ball size balls and fry slowly until lightly browned on all sides. Drop them into the tomato sauce and finish off the cooking for about 15 minutes on a low heat. The spaghetti took six minutes to cook perfectly. Nothing left to put in the freezer on this one....
