Homemade Paneer (COTTAGE CHEESE) Paneer substitutes any processed cheese and any cheese purchased in stores. It has the same nutritional values as tofu and is far easier to prepare at home with pure milk. 3 litres milk (minimum) 2 large lemons or 3 small ones To obtain 2 cups of paneer, boil 3 litres of full cream milk, and when boiling add the juice of 2 lemons. Let it curdle, stirring for a few minutes. Strain all liquid out using a muslin cloth or a square strainer so that cutting the slices will be even and easy. Press and see that it has become like a roll of hard cheese. You can hang the muslin cloth over a pot for ½ hour pressing the paneer tightly. When cold, it is ready for any recipe.
