Hot Cross Buns.. Easter special Bakes.. Recipe adopted from The Joy of baking, made few minor changes… 3 1/2 - 4 cups (455 - 520 grams) all purpose flour 3/4 cup milk 2 teaspoons dry yeast 1 teaspoon granulated white sugar 1/4 cup sugar 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1/4 teaspoon ground allspice 1/4 teaspoon ground nutmeg 1/2 teaspoon salt 70 grams unsalted butter, melted 1 large egg, lightly beaten 1/3 cup candied fruit and peel mix 1/3 cup currants (or raisins) Luke warm Water -1/4 cup Method In a glass take ¼ cup lukewarm water, mix 2 tsp yeast and 1 tsp sugar. Mix well, and Leave aside to ferment. In a large mixing bowl, mix 3 1/2 cup of flour, salt , sugar and spices powder. Mix the milk and butter, lightly warm in a mwo, (lukewarm).Make a well in the flour mix center, pour in the risen Yeast mix, lightly beaten egg, and the lukewarm milk and butter mix. Knead well, use the remaining flour little at a time, shift to a work table and knead well, slowly adding in the peels and fruits mix, till you get a soft and smooth dough. Keep in a greased pan covered with a wet towel and sealed with a cover, for two hours, until it has doubled in size. After 2 hours, push down the dough and make 12 equal sized balls. With a scissor, make cross cuts on top of the individual dough, cover it with a wet towel for another 30 minutes to 1 hour, till it has doubled in size. Just before baking brush the risen dough with egg wash. Mix 4 Table spoon flour, 1 table spoon sugar and 2 table spoon lukewarm water to make a loose batter with piping consistency. Pipe a cross across each bun. Bake in a pre heated oven at 200 C for 25 to 35 minutes. Enjoy these for your Easter meals.
