I bought some Anaheim peppers at the market on Sunday based on a recommendation from a friend. I grilled them, then halved them and removed the seeds and lined a casserole dish with them. In a large skillet I sautéed some chorizo, onion & garlic then seasoned it with Chive Jive from Alchemy Spice Co and added a can of pinto beans, some cooked brown rice and some frozen fire roasted corn. I spread that mixture over the peppers then poured salsa over that and topped with some black olives and freshly grated sharp cheddar & Monterey Jack cheese. I baked it in the oven for about 20 minutes until hot and bubbly. Served it with fresh sliced avocado & sour cream. It was OUT OF THIS WORLD DELICIOUS!!!
