I hope it’s clear through the past 12 posts that Western diseases (obesity, diabetes, heart disease, even some dementia and cancers) are out of control because of a toxic food environment. The biggest proof to me isn’t a study but the many observations by explorers and doctors that foreign cultures didn’t have these diseases in any great number until they traded their traditional diets for one with lots of grains and sugar. Since the last century, we have accepted the food industry’s processing of our food with chemicals, additives, and preservatives because it’s easier, faster, and cheaper than home cooking. We accept vegetable oils, gluten, and sugar/artificial sweeteners added to virtually every product on the shelves. We wonder why our pets are overweight when they eat heavily-processed kibble with grains, fruits, and vegetables that they wouldn’t normally eat and don’t need. We don’t want to think about what’s in restaurant food (see below). It’s easy to ignore when you don’t feel sick. But once you do, you start paying attention. You start researching what you put in your body. And you get frustrated at all of the money, time, and energy being put into searches for “cures” when the problem is right in front of us. Fixing the 20th century food mistakes and changing our diet are behemoth tasks. Until we stand up though, our health will continue to suffer.
