I love Sunday. It means a healthy Roast dinner. This recipe is quick and easy and is ready in two hours (If your chicken isnt huge). Roast Chicken with Roasted Mixed Vegetables. Carrots, Parsnips, Whole Baby Potatoes and Red Onions (Use what veg you like). Peel the onions and cut into segments through the core, so they keep their shape and set aside, you put them in later. Peel and chop the other veg into 2inch pieces and place in roasting tin pour in small amount of oil to coat the veg. Chop Thyme and Rosemary and Garlic, (1 Clove 2 people) Add the the veg with Sea Salt and Pepper give a good mix. (Do not use table salt, its bad for you) Heat oven to gas mark 5 / 180C. Season the chicken with salt and pepper or herbs if you wish and place the chicken in the center of the veg. Do not worry if its cramped. Place in the middle of the oven for 40 minutes. Take out of the oven and give the veg a stir. Put back in the oven for another 40 minutes. Take out of the oven and check to see if the chicken is cooked by cutting into the thickest part of the thigh, if the juices run clear then place on a plate and cover with foil. If there are lots of juices in the roasting tin, drain most of it away and spread out the veg evenly. Add the onions. Turn the oven up to gas mark 7 / 200c. Place back in oven on the top shelf for another 20 minutes or so to crisp up. Carve up the chicken and serve. The the veg has soaked up the chicken juices, so theres no need for gravy and if you like stuffing hunt for a bread free recipes. Happy Sunday Everyone
