I made a great turkey salad yesterday. one whole turkey breast brined, baked, and shredded dill pickle relish sliced seedless green grapes pecans roasted in olive oil,spicy red chili powder, garlic powder and sugar, then diced finely diced shallot finely diced celery finely diced white onion, but purple onions add a nice color a ton of black pepper mix equal parts low fat mayo with low fat sour cream, and fold it all together. Ive been eating this in a warm fajita wrap with a whole romaine lettuce leaf, diced tomato, and shredded cheese. So good. My wife has been eating it on a 12 grain wheat bread with veggies or as a dip with Triscuit crackers...sun roasted tomato and olive oil I think, but also roasted onion flavor. Regardless, its really good, and a low fat, high protein meal that took about 20 minutes to assemble. I couldnt tell you how much of each ingredient there is. I cook by eye, and never measure anything. Tonight Im cooking a potato and ham soup. Its soup or chili weather now, and I think soup with the salad would be awesome. potato and ham soup recipe; a dozen peeled, roughly cubed large russet potatoes boiled with minced garlic and black pepper til done and then drained two pounds smoked ham diced into bite size pieces low sodium chicken stock fat free half and half skim milk half a stick of unsalted butter...real butter please!!! fat free sour cream(can be put in a blender with the milk to incorporate evenly) roughly diced onion and celery I add these ingredients together and bring the concoction up in heat just hot enough to slowly cook the raw veggies. Once the onion and celery is cooked, I add half a pack each of frozen peas and frozen sweet corn and remove it from heat with the lid on for about 10-15 minutes salt and pepper to taste. To thicken it, I shove a potato masher down two or three times and give it a twist at the bottom....I guess corn starch would work too. edited to add; I prefer croutons with this soup instead of crackers We will be rockin out our big old bellys in this house tonight
