I saw this while perusing the interwebs and it reminded of just how destructive nutritional myths are especially to Hispanics. I’m headed to the Rio Grande Valley (where I grew up) tomorrow and it always gets me thinking about how to help people WAKE UP to the truth about the food they eat/used to eat. Mexican food, traditionally was FAR from the unhealthiest. The corn they ate was most likely grown themselves, NOT genetically modified, like most of the corn grown and consumed today. The “horrible” saturated fat used for making tamales and flour tortillas was actually lard rendered from farm pigs. Today that "saturated" lard, is NOT saturated at all, it’s mostly UNSATURATED from soybean oil, canola, and corn oils. Re-fried beans and rice? Same as above, all re-fried in industrial oils from genetically altered toxic oils like canola, soybean, and corn. Menudo, beef, and other meats used for cooking USED to come from local farm animals. Now, they are purchased from huge conventional meat markets from animals that are fed grains, corn, and soybeans. The “poor nutrition” statement is correct, however, but NOT because of the traditional foods of the Hispanic and Mexican populations, but rather from the current state of our food industry and LACK of nutrition in the majority of our food supply.
