Im sorry to inform you that as you read this, I am indulging in all that is displayed on my collage. Yet another one of my unique designs made from scratch but not really. Lol! I just scan the resources and the ingredients readily at my disposal. After a brief in depth analysis, I come to the conclusions that youve been witnessing from time to time. Here I present to you my own interpretation of the classic and time less Mexican cuisine dish, better known as Huevos Rancheros (*translation: huevos = eggs, ranchero = rancher; Rancher Eggs). The eggs (protein, fiber, vitamin C and E, antioxidants, magnesium, iron, anti-inflammatory phytonutrients, cardiovascular benefits, benefits for blood sugar regulation and more): saute onions, green peppers, mushrooms, beat eggs, salsa de Chile fresco El Pato (*mild spicy tomato sauce, brand: El Pato), and cheese. Potatoes (blood pressure lowering potential, vitamin B6 - good for building your bodys cells and in the brain helping nervous system activity, cardio vascular protection, athletic performance-, potassium, copper, vitamin C, manganese, phosphorus, and much more): deep fried in olive oil, drained, spread across cookie sheet/baking pan, sprinkle powdered cinnamon, garlic powder, powered cayenne pepper, and bake for few minutes until desired crunch (the side stays soft). Black Beans (fiber, protein, magnesium, iron, antioxidants, anti-inflammatory phytonutrients, cardiovascular benefits, benefits for blood sugar regulation and more): saute onions, green peppers, mushrooms. Salad (vitamins C, A, B3, B2, calcium, beta-carotene, prevents oxidation of cholesterol, folic acid to help against strokes, potassium to help reduce high blood pressure & helps build lean muscle mass, fiber stimulates fat burning, supports digestion and much more): romaine lettuce, radicchio, bacon, bacon bits. Dressing (protein, low - moderate fat, low carbs, curves your hunger and much more, promotes weight loss): sour cream, a tad bit of ranch dressing, milk, black pepper, garlic powder. Drink (soothing, relaxation, carbs): Michelada, tomato cocktail with lime, Tajin powder seasoning and beer. P.S. The background was created by Stavonne Ballesteros, Danny Ballesteros and me. This little Zen garden comes fully equipped with a waterfall (seen behind the michelada/drink), several plants for air filtration and add to the relaxation mode, and lights lit up the night sky next to the stripped shade.
