In a casual conversation recently, I happened to mention that all of my learning goals for the year seemed to be in baking. Someone immediately asked, Whats a learning goal? And I replied that I have set learning goals all my life and that one of the pleasures, apart from having acquired a new skill, is that the acquisition of one skill tends to lead to another and without having put out a lot of effort, you have a long future of things to do, things to learn, things to practice ahead of you. Example: Some time back, I decided I wanted to learn to bake sourdough bread and through trial and error, the mixing and the kneading and the rituals of sourdough have become a part of the game. So, whats next? Heres the learning list for the coming year. Some are underway, all have a ways to go. Really good pie dough which will lead to really good pastry dough (think vodka), really good biscuits, Pate a choux, pastry cream, ganache, and crรจme caramel. I am a fan of most cooking shows but have really come to hate the nasty nice who waste time and product plating food with a dot of this, a smeary streak of that and generally weird ingredients and cooking styles just for the sake of being different. What I am about is good food, treated with respect, and plenty more where that came from. If all the learning goals pan out, I will have to recruit some eaters.
