International Partnership for Human Development (IPHD) Utilizes Dehydrated Potato Flakes in FFE Program in Congo-Brazzaville IPHD included dehydrated potato flakes in the food basket to provide quick-to-prepare meals for more than 160,000 primary school children attending over 200 schools in Congo-Brazzaville. A “Train the Trainer” format was used in two, three-day interactive trainings held in Dolisie and Brazzaville. Training included background on global and regional potato production and consumption, storage and handling of the product and packages, nutrition/health benefits of dehydrated potato flakes, how dehy complements the other commodities in the food basket, and a kitchen experience. After the core training, trainers were placed in groups to develop training strategies to teach kitchen workers proper storage, handling, and preparation of the product. Recipes were developed, tested, and critiqued by the trainers to finalize their weekly menus that were tailored specifically to the IPHD Food for Education Program. The 30+ participants included government leaders, community leaders, and IPHD field officers. Each were trained as trainers to assure they could become resources to assure the optimal use of dehydrated potato flakes and demonstrate its versatility and acceptability as a part of daily meals provided to primary school children.
