Italian style Meatloaf for dinner tonight and sandwiches for the game tomorrow! Try my recipe for this classic comfort food and you will be hooked. 2-tbs butter 1/2 cup of minced onion 1/2 cup celery minced 1 Tbsp minced garlic 1/4 cup carrot, minced 2 teaspoon salt 1 teaspoon freshly ground black pepper 1-tbs Worcestershire sauce 2-tbs tomato paste 2-lbs ground beef or a blend of beef and turkey 1/2 cup bread crumbs 1 large egg beaten 1/4 cup chopped fresh parsley leaves An extra 2-tbs of tomato paste for the top of the meatloaf Take the onion, garlic, carrot and celery and if you have one pulse it in a food processor until very minced. If not just try to mince very fine with a knife. Take a skillet add the butter, salt and pepper and turn the heat to high and add this veggi mixture. Sauté this until translucent and soft about 5 minutes. In a large bowl add all of the ingredients (except the extra tomato paste for the top of the meatloaf) and mix well by hand. Form into a loaf and place on a baking sheet or use a meatloaf pan. Spread the remaining 2- tbs of tomato paste on top. Place in a 375 degree pre heated oven until internal temperature reaches 160 degrees. Allow the meatloaf to rest for 10 minutes before serving. I served mine with peas that I sautéed in onions, garlic and a little olive oil and a side of quinoa. Meatloaf makes incredible sandwiches the next day for work or for your childs lunch.
