Strawberry Santas: These strawberry Santa’s are a great way to make sure you’re keeping up with your fruit and vegetable intake over the holiday season – it’s also a great way to get your kids in the kitchen and helping out with food preparation. Strawberries are packed full of fiber and vitamin C – a vitamin we need to get from food, as our own bodies are unable to synthesize it! For a lower-calorie version, use low-fat cream cheese and a sugar substitute such as Stevia. Ingredients: 1 lb large strawberries 1 package (8 ounce) cream cheese, softened 3-4 tablespoons powdered sugar (or sugar substitute - to taste) 1 teaspoon pure vanilla extract Mini chocolate chips for “Santa eyes” Directions: Rinse strawberries and cut around the top of the strawberry. Remove the top, (enough for a hat). Clean out the whole strawberry with a paring knife, if necessary (some of them are hollow already. Prep all of the strawberries and set aside. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or Ziploc with the corner snipped off. Fill the strawberries with cheesecake mixture. Once strawberries are filled, top with the hats. Decorate according to photo. If not serving immediately, refrigerate until serving.
