Its Thursday and we have two more days of our challenge. I feel good about my accomplishments. Yesterday was a salad day. I had a fruit salad for breakfast with chopped walnuts and almonds. I fasted until dinner time and had an enormous salad of spinach, mandarin oranges, walnut, and my fave oil free vegan dressing. I also had a small vegetable soup (with lots of tomatoes, carrots, spinach, great peans, other veggies, and some spices). I didnt neglect drinking plenty of water. I didnt do much snacking yesterday either. Today for breakfast I plan to have a smoothie. Not sure what Ill be snacking on yet. Probably raisins... For lunch I may do a salad or grab a plate from Whole Foods or a Juice. Ill be home early today hopefully so Ill be cooking dinner. (Vegan meatless meatballs with brown rice spaghetti, and my homemade pasta sauce) Ill try to share the recipe for the sauce later.
