Its a beautiful...no wait, it is an ABSOLUTE CRACKER of a day outside... Alas,Ive spent most of it (I did go for a walk on my lunch break) trying to catch up on my Foundations of Human Nutrition subject because somehow, even whilst on school holidays from my day job as a primary teacher, I managed to get almost 3 weeks behind...eeek! Anyway, lucky for me the subject is SUPER interesting!! Ive just finished catching up on week 1 and have learnt so much already. This first week was a lot about carbohydrates and what low GI and high GI actually means along with the difference between Glycemic Index and Glycemic Load. This short 6 minute video we watched as part of our tutorial activities by Geoff Bond provides great food for thought in a basic manner. He talks about the long list of diseases that sustained high blood glucose levels (via high GI/refined Western diets) are contributing to in the Western World. The more I learn, the more excited and reassured I am that Nutritional Medicine is an exciting path to be on!
