Youll need an extremely large baking pan (microwave is absolutely out of the question at this point; were long past that). Youll also need extra-virgin olive oil, sea salt, pepper and an extraordinarily hot oven. The temperature will, of course, depend on the varietal. If youre working with shoestring potatoes, crank it to at least 400 degrees (you can thank surface area for that); if you splurged on the crinkle or steak style, youre gonna have to bump it up to 450. Bake for at least 16 minutes. Dont be afraid of a little burning along the ridges, because thats far, far preferable to the alternative -- the dreaded soggy center.
