It’s Fish for Friday, A scrumptious salmon and grape dish jammed packed with healthy protein and omega 3, great for dieters and very easy to do. Takes 20 minutes and serves 4 Preheat your oven to 150C (Gas mark 2) In a bowl mix together 2tsp English mustard, 2tsp dried thyme and 2tsp runny honey and then rub into 4 salmon fillets. In a frying pan add a splash of olive oil and brown both sides of the salmon then transfer to an oiled baking tray and bake for 10 minutes. Meanwhile add another splash of oil to the frying pan and sauté about 225g halved red grapes for 2 minutes then add 125ml red wine, bring to the boil and reduce by half. When ready to serve pour the grape sauce over the salmon. Goes great with steamed new potatoes and tender stem broccoli. Yummy & Healthy too!
