Just in time for the dog days of summer, when the light and bright elements of Persian cuisine are particularly welcome, Hillcroft stalwart Bijan Persian Grill has opened a new Sugar Land outpost. They’re already putting out kebabs, grills and dips worthy of the original, judging from a recent weekday lunch. The Joujeh Kebab alone (a grilled Cornish hen popularly known by the rather bald name “Chicken with Bone”) was spectacular enough that just about any top restaurant in town would be proud to serve it. Saffron-glazed and charry, the bird was deeply and surprisingly juicy. Add a big wheel of freshly baked Persian flatbread and a combo plate of dips, plus the complimentary plate of radish, feta and herbs that lands on every table, and you have all the ingredients of a mix-and-match fest. That’s the beauty of Persian food: the constellation of flavors, textures and temperatures varies according to the way you customize each bite.
