Katies Favorite Meal: Coriander Herb Pesto Sammies Ingredient list: Grilled chicken breast (1 per person) Sliced Italian bread Extra virgin olive oil Velata coriander herb artisan rub Sliced Provolone or mozzarella cheese Tomatoes Prepared pesto Your raclette Velata chefs knife Turn on raclette and set to high. Place chicken breasts on grill side to cook while you prepare your toppings. We love using frozen precooked chicken and let the raclette thaw and warm it for us. Plus, we get those beautiful grill marks we all love! While chicken is cooking, slice tomatoes thin. The ceramic chefs knife we offer makes this so easy. It slides through like butter and doesnt crush or squeeze all those juices everywhere. On a small plate, pour your evoo and a tablespoon of coriander herb rub. Mix together using a fork. (You may do this a couple of times depending on how many Sammies you are preparing) Dip one side of your sliced bread into the oil lightly and place oil side down onto the flat surface of the raclette. You should be able to toast 4 good slices at a time. Repeat until all pieces are toasted and lightly brown. Next, place your sliced provolone in your raclette trays and place in the slots to melt. Now, were to build! (See how easy this is!) Remove a slice of toasted bread and smear a good spoonful of prepared basil onto the side that is not toasted. Take your grilled chicken and place on top of the pesto, followed by the slices tomatoes. Grab your tray of melted provolone and scrape onto the top of your tomatoes. (Best part!) Finally, finish with a second piece of toasted coriander herb bread and you are ready to go! You will want plenty of napkins and maybe a second sandwich on backup. As you can tell, we are big fans of this easy (fancy pants looking) meal. A great one to impress the friends with ;) Happy eating!
