Looking for a quick, easy, and inexpensive snack that packs a great protein boost? Try this! Curry chickpeas 2 cans of chickpeas, drained and rinsed 1 can diced tomatoes (watch for unwanted added sugar!) 1/4 cup tomato sauce (again look for one without extra sugar) 1 large onion Curry powder Cilantro Turmeric Black pepper Ground cumin Mix chickpeas, spices, onion, and any additional veggies you like in a frying pan with a teaspoon of coconut oil Cook over medium heat for 8-10 minutes until the onion starts to turn clear Add diced tomato and tomato sauce Cook over low until juices boil off I was able to separate this into 5 containers suitable for lunch. I would have taken a picture, but I ate it all......
