Looking forward to Chef Daves visit. Heres a sample of what hes cooking up for us today! Impress your guests at the next bbq. Grilled Chicken Skewers Serves 4-6 1 small onion minced 1 garlic clove minced 1tsp vegetable oil 1lb boneless skinless chicken thighs cut into 1 inch cubes For the dip: 1 tsp Freshly ground black pepper 4 tbsp Brickstone Fine Foods Apricot and Jalapeno jam, juice of one lime 1. Mix the onion, garlic with vegetable oil. Add the chicken and toss to coat. Refrigerate and leave to marinate for at least 3 hours covered. 2. Skewer 2-3 cubes on pre-soaked wood skewers for about 5 minutes, turning once. 3. For the dip, mix and slightly warm the apricot jalapeno jam, black pepper and lime juice. This recipe works great with 1 lb of jumbo shrimp or tiger prawns
