Grilled Trattoria Chicken Serves 6 Ingredients: 3 Tablespoons Extra Virgin Olive Oil 3 Tablespoons Balsamic Vinegar 1 Tablespoon Dijon Mustard ½ Teaspoon Dried Thyme ¼ Teaspoon Each Salt & Pepper 4 Large Chicken Breasts, boneless & skinless 8 Cups Arugula 1 Cup Roasted Red Peppers, thinly sliced 1 Cup Mushrooms, thinly sliced ¼ Cup Shaved Parmesan Cheese Directions: In a small bowl, whisk together oil, vinegar, mustard, thyme, salt & pepper. Place chicken in shallow dish; add a little less than half of the vinaigrette, reserving the remaining vinaigrette. Turn to coat each chicken breast, let stand for 10 minutes. Place chicken on greased grill or grill pan over medium-high heat; close lid or cover & cook, turning once, until no longer pink inside, about 15 minutes. Transfer to cutting board & slice thinly on a diagonal. Place salad on plate & top with chicken.
