Ok this is indulgent, but due to it being so rich, you wont eat too much... Hopefully :) This is a treat and not for everyday!! Taken from Dale Pinnock - The Medicinal Chef and tweaked slightly. Its sugar free, dairy free and gluten free. Also added health benefits if you suffer from any of the following - eczema, high cholesterol and high blood pressure. Mint Chocolate No-Cheese Cake Serves 10 Ingredients For the base: 200g mixed nuts (such as Brazils, hazelnuts, almonds, walnuts) 6 pitted dates (chopped) 3 tbsp coconut oil (preferably organic) For the chocolate layer: 4 very ripe and soft avocados (halved and stone removed) 5 heaped tbsp of high quality cocoa 1 tbsp agave nectar (or other natural sweetener) 2 tsp peppermint essence (you may need slightly more) 3 tbsp coconut oil Method 1) Add the dates and nuts to a food processor and blitz until a stiff dough is formed. Melt the coconut oil in the microwave or in a small saucepan and then add to the dough and process again until well combined. 2) Empty the dough into a 20-23cm loose bottomed cake tin and press down to cover the bottom of the tin. 3) Place the tin in the refrigerator to chill and set the base. 4) Now scoop the flesh from the avocados into the food processor, add the cocoa, agave nectar, peppermint essence and melted coconut oil. 5) Blend the mixture until well combined and a rich chocolate mousse is formed. (At this stage taste to see if you need more peppermint) 6) Remove the tin from the refrigerator and pour the chocolate over the base smoothing over the top into an even layer. 7) Now for the difficult bit, place in the refrigerator to chill for around 5 hours before serving :) this allows the coconut oil to set. Nutritional Info - per serving Calories 384 Fats 32.6g Saturated 11.5 Polyunsaturated 1.7g Monounsaturated 7.8g Carbs 21.3g Sugars 11.1g Protein 6g Yes its high in fat - but healthy fats as opposed to Trans fats. All the sugars come from natural sources so you wont get a sugar spike... Great served with a little Greek yoghurt, double cream or other dairy alternative.
