Fresh Corn and Black Bean Salad 1/12 cups canned black beans, drained and rinsed 1/12 cups corn kernels, removed from corn cob 1 cup seed and diced tomatoes ½ cup minced onion ¼ cup seeded and finely diced green bell pepper 1/12 cups chopped parsley 4 cloves of minced garlic Salt and pepper to taste 2 tbls. olive oil 2 tsp fresh lime zest Heat a large sauté pan at medium high heat. Add the olive oil. After olive oil is heated, add corn kernels. Sauté corn for approx. 5-10 minutes or until lightly browned. Add onions and garlic to the corn in the sauté pan and cook for 5-7 minutes. Mixture should be softened and lightly browned. Add bell peppers, tomatoes and black beans and continue cooking for 5-7 minutes. Add salt and pepper to taste. Off the heat add chopped parsley and lime zest. Combine with the rest of ingredients. Serve immediately. Yields: 8 servings
