PINE APPLE CARROT CAKE Ingredients: 3cups All purpose Flour 2tsp baking soda 2tsp baking powder 1tsp salt 1½ cup Oil 2cup Sugar 4pcs Eggs 2tsp Vanilla 2cups grated carrots 1cup undrained crushed pineapple Cream cheese frosting: 1pack 255gm cream cheese ½ cup butter 2cups confectioner sugar 1tsp vanilla ½ cups chopped cashew nuts Procedure: Preheat the oven to 3500F. Grease and line a 13x9x2 inch rectangular pan. Set aside. Sift together the first four ingredients. In a bowl, combine the oil and sugar. Add eggs, one at a time, eating well, after each addition. Stir in the vanilla. Add the dry ingredients then the carrots and pine apple. Mix until well blended. Pour into the prepared pan and bake for 35mins or until done. Prepare cream cheese frosting. In a bowl, beat cream cheese and butter until smooth and fluffy. Add the sugar and vanilla and continue beating until of spreading consistency. Frost sides of cake with frosting sprinkle with nuts. Chill before serving. BUTTER CAKE Ingredients ½ cup butter 1/3 cup Sugar 5pcs egg yolks 2 ¼cup Cake flour 2 ½ tsp Baking powder 1tsp salt 1tsp vanilla ¾ cup milk Procedure: Preheat oven to 3500F. Grease and line a 9x5” loaf pan. Set aside. Cream butter until soft. Add in sugar and beat until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Sift the flour, baking powder and salt together. Add to the creamed mixture alternately with the vanilla and milk. Blend well. Pour into prepared pan. Bake for 40-45 minutes until done. Chocolate Marble Cake Ingredients: 1 cup Butter 1cup sugar 1 tsp vanilla essence 3cup cake flour 2tsp baking powder ¼ tsp salt ¼ cup milk (evap) 4pcs egg white 1 oz plain chocolate or chocolate powder 2tbsp Hot water ¼ tsp baking soda Procedure: Beat butter and sugar until light and fluffy. Add vanilla. Sift the flour, baking powder, and salt together and add to the creamed mixture alternately with the milk. Beat well with each addition. Beat egg white stiffly and fold into the mixture. Mix the melted chocolate with water and baking soda. Add this mixture to half the cake mixture. Alternately light and dark mixtures by spoonfuls in a greased and line in about 9 ½ by 5 by 3”. Then bake for 40-45 minutes in a 3500F oven. When cold, ice with creamy chocolate icing. te honey oh.
