Pan fried trout, veggielicious pasta salad and spinach cakes for supper with one beautiful strawberry and a tiny square of the dark chocolate brownies I made Dwayne for dessert. The spinach cakes were from when my little boy & I had cooking time today. He chose it and they were soo good! Super simple. 1 package frozen spinach, 1 chopped onion, 1 Tbsp butter, 1/4 c. bread crumbs, 2 beaten eggs and salt and pepper to taste. Cook & drain spinach. Saute onions in butter. Combine spinach & onions & bread crumbs. Add eggs and spices. Drop spoonfuls of mixture into hot greased frying pan and cook on both sides until lightly browned. Way yummy!
