Pastillas is a famous delicacy among Filipinos and it can be found anywhere in the country. The simple pastillas is made of sugar and milk combined together. But in San Miguel De Mayumo, which is also known as pastillas town, the San Migueleno take their pastillas seriously. It’s said that one of the best places to get pastillas is in San Miguel De Mayumo. Here are six reasons why pastillas is much loved among Filipino sweets: 1. Creamy and Smooth There are many kinds of pastillas available-- some of them are thin and hard, and others have a consistency that’s more like yema (custard candy). But the most popular kind of pastillas is the creamy and smooth ones. They’re sweet and softly malleable and melts in the mouth. 2. Made from Carabaos Milk The best kind of pastillas is the one made from carabao’s milk, according to some pastillas de leche purists. And it has to be pure carabao’s milk and no added mixtures such as condensed or evaporated milk. In fact, pastillas was said to have been originally made from carabao’s milk. 3. Short but Sweet Since a main component of these sweets is milk, the pastillas de leche has a short shelf life compared to other Filipino sweets. They’re best eaten within five days after they’re manufactured. But that’s no problem for anyone bringing them for pasalubong, pastillas easily disappears once its existence is made known among the inhabitants of any house. 4. The Art of Pabalat (Wrapping) Among the towns in Bulacan, many of them have taken not only the art of making pastillas to the next level, but also in wrapping them. In San Miguel De Mayumo, their pastillas aren’t just known for their sweetness but also for their artistic wrapping. The pastillas are wrapped in multi-colored papel de hapon (Japanese paper) and the tails are cut and decorated into various designs. The intricate paper cut-outs are celebrated as one of the finest folk art in Bulacan. 5. Pastillas de frutas y sortido The pastillas today are available not just in various wrappers but in different assorted flavors as well. A popular variation of the pastillas is the pastillas de ube. Second to that are the pastillas made of langka (jackfruit), yema, and keso (cheese). And unlike the classic creamy pastillas, there are even toasted pastillas, which are different but deliciously sweet in their own way. 6. Fruit of Many Moments The pastillas, like other Filipino delicacies such as yema or espasol (rice cake), is cooked by constantly stirring the mixture over low fire. It has to be carefully watched over lest the mixture burns (in which case it will automatically become toasted pastillas). There’s a lot of hard work involved in making these smooth and creamy sweets, while it’s so easy to see them disappear when served at the table. Like most other Filipino snacks, the pastillas is sold everywhere, much like rice delicacies such as suman or espasol. It’s easily accessible to buy from various street stalls, booths in the malls, sari-sari stores and even bus terminals. It’s a Filipino treat that’s shared by everyone.
