Perhaps the greatest casualty of the diet-heart hypothesis, as perpetuated through the figures and studies, was the destruction of a once-holistic perspective on food. Post Keys (Ancel Keys) we no longer saw our sustenance as a symbiosis of nutrients - but instead started defining items on the basis of a single macronutrient they contained, particularly fat or saturated fat. The Keysian mindset led, directly or indirectly, to our current reductionist view of eating, where trigger terms like saturated fat or cholesterol or fibre or omega-3 or antioxidants tell us immediately (and most often erroneously) whether a food is good or bad for us. And with that mentality came a prime opportunity to exploit our newly warped, simplistic view of our very sustenance for the purposes of marketing, profit, fear, and manipulation from Death by Food Pyramid by Denise Minger
