Pumpkin Scones Ingredients: 2 ½ Cup Self Raising Flour ½ teaspoon mixed spice 30 grams cold butter, chopped 1 Cup Mashed Pumpkin cooled ¼ Cup white sugar 1 egg, beaten ½ teaspoon Bi – carbsoda Method: pre heat oven to 210 oC .Grease tray. Sift flour in to a blender and add butter mix for 2 mins. Remove flour to a bowl make a well in centre, Add bi-carbsoda to pumpkin and stir. Then add to flour with egg and sugar. Using a bread and butter knife, mix quickly to a soft, sticky dough. Do not over mix. Turn on to lightly flour broad and knead lightly. Press out to about 2 cm high cut in circle place on tray close together.. Bake in oven for 12 to 15 minutes or until scone sound hallow when trap on top. Cool in between to tea towels.
