Quiche—Easy Low Fat Single Crust Pie Shell 1 1/3 cup flour ½ tsp salt ½ cup shortening or margarine, or butter or a combination 3-6 Tbs cold water Filling 4 eggs 1 cup milk ½ -1 cup grated cheese 2-3 cups diced vegetables and/or cooked meats: broccoli, peppers, spinach, ham, bacon, ground beef, salmon, onion, garlic, carrots, celery, peas, etc. 1 tsp mustard or ½ tsp mustard powder (optional) Herbs such as basil, oregano thyme, sage How to Make: 1. Make pie crust by mixing flour and salt in a medium bowl. Blend in shortening until mixture looks like fine crumbs. 2. Add cold water, a little at a time, mixing and form a ball. 3. On a lightly floured surface, roll out dough to fit your pie plate. 4. Layer vegetables and meat in pie shell. 5. Mix eggs, milk and herbs and pour over vegetables. 6. Top with grated cheese. 7. Bake at 400F for 45-50 minutes or until a knife inserted in the center comes out clean. You can cook or sauté the vegetables to soften slightly before adding.
