Quick & Yummy Saturday Supper of Jerk Chicken Wings with a mango and bean salad. Takes only 15 minutes and serves 4. I tried it last Saturday and everyone loved it. What you need: 12 chicken wings. For the Marinade- 1tbsp olive oil, 4 spring onions, halved, 2 cloves of garlic, 5cm peeled fresh ginger, a handful of coriander, and one of thyme stalks, pinch of allspice, 1 red chillies chopped (with seeds) 1tbsp tomato puree and 2tsp freshly ground black pepper. For the Salad – 400g can black-eyed beans, drained and rinsed, 200g chopped fresh mango, ½ red onion quartered and sliced and the juice of ½ lime. Preheat your oven to 210C (Gas mark 7). Throw all the marinade ingredients into a food processor, season well and whiz until combined. Smother the chicken wings with the mixture then tip into a roasting tin and cook for 12 minutes until cooked through & golden In a bowl toss the salad ingredients together and season to taste. Serve the chicken wings in a bowl with the salad on the side. ENJOY!
