Quick and Easy Tomato Rasam Rasam, a popular watery dish, eaten with rice in south India is no longer tedious or difficult. I learnt this recipe from one of our relative Geethakka. It has come to my rescue when we are really tiered and have to cook something with limited ingredients. Ingredients: Tomatoes – 2 Green Chili- 3 (according to taste) Coconut milk/milk – 1/4th cup Turmeric – 1 teaspoon Jagerry/Sugar – 1 tea spoon according to taste Salt – According to taste Cumin – 3 teaspoon Curry leaves – Few Cilantro – Few Oil Serves – 2 to 3 Time taken -10mns Method of preparation: 1) Cut tomatoes into pieces and boil it with chopped green chilies and salt by adding little water 2) Once tomato is completely boiled, add some more water (around 400ml), turmeric, sugar, coconut milk (or whole milk) and cilantro and boil for 3 minutes 3) In another pan, heat 3 teaspoon oil and cumin seeds and curry leaves. Once the seeds splutter add it on to the above mixture. Rasam is ready to eat. Note: More water can be added than said above if you want to make rasam light, but add salt, jaggery and chilies accordingly
