Rating Prep time:20 min, plus 10 mins refrigerationCook time:40 minServes:4Difficulty:easy Vegetarian burgers packed with walnuts, bulgar wheat and beans Ingredients For the burgers •1 onion, finely chopped •2 tbsp olive oil •80 g bulgar wheat •230 ml water •250 g tinned white beans, drained and rinsed •30 ml soy sauce •75 g walnuts •2 garlic cloves, finely chopped •45 g coriander leaves •¼ tsp ground cumin •¼ tsp cayenne pepper • pinch of salt • pinch of pepper For the sauce •60 g mayonnaise •1 tsp lemon juice •1 tsp lemon zest For the topping •1 large tomato •2-3 tbsp olive oil •1 pinch dried herbs de provence • large handful of rocket •4 burger buns, halved Method 1. For the burgers: In a pan over a low heat, add a drizzle of olive oil and lightly brown half the onion for 5-7 minutes. Add the bulgar wheat and water and cook for 15-20 minutes, covered over low heat, until the water has been completely absorbed. 2. Pour the bulgar wheat mixture into a food processor, then add the white beans and soy sauce. Process the mixture, adding the walnuts, garlic, coriander, cumin, cayenne pepper, salt, pepper and the remaining onion to make an even mixture. Work the mixture in short pulses, taking care to not over process. Form 4 patties and put them in the refrigerator for at least 10 minutes. 3. For the sauce: Combine the mayonnaise with the lemon juice and zest. 4. For the topping: Cut the tomato into 4 rounds. Cover them with olive oil and sprinkle with herbes de provence. Cook them in a hot frying pan for 5 minutes, turning them halfway through the cooking time. 5. Brush both sides of the patties with olive oil. Heat a frying pan over a high heat and cook the patties for about 5-6 minutes on each side. 6. Heat the grill to medium and toast the buns for 2 minutes. Spread the cut side of the bun base with the sauce, the layer the cooked tomato slices, the patties, a few rocket leaves and finish with the bun top. Tips and suggestions If you cant find herbes de provence, use a blend of rosemary, savoury, thyme, marjoram and oregano
