In Trinidad and Tobago, lemongrass (cymbopogon citratus), or fever grass as we call it, is only used for its medicinal properties. This wonderful fragrant grass {Lemongrass} is used extensively in many Thai and Vietnamese dishes outside of just medicine for fever As you would see or rather taste, this butter is really smooth with a mild, But the only way you can really enjoy this butter is through cooking where the lemongrass flavour will get to infuse into the butter. Let’s make some chive and lemongrass butter. Ingredients; 4 oz (1/2 c) unsalted butter 2 tbs melted butter 2 tsp. minced lemon grass 1/4 tsp grated lime rind 3 tbs finely chopped chives 1 tbs lime juice salt to taste Here I’m showing you all how to prepare the lemongrass. Elementary really. Mix butter, add other ingredients add salt to taste mix thoroughly and then chill until firm. Use with chicken, fish or vegetable dishes.
