Recipe for Keisershmarren for those who asked for it (from Wir Kochen Gut, 1968). Its really just a fluffy pancake: 4 eggs, separated; 2 Tbsp sugar, 80g flour, , 4 Tbsp milk or water, salt, a little fat for frying, caster sugar for dusting. Mix the yolks, sugar, flour and liquid. Beat the eggwhites with the salt until stiff and fold into the rest of the mixture. Heat up the fat in a frypan and pour in the mixture so that its 1cm thick. When the top looks dry, cut the pancake into 4 and turn the pieces over. Last, if you like it crunchier, break up into smaller pieces. Dust with sugar and traditionally, serve with plum compote. You can also make a savoury one by omitting the sugar and adding pieces of speck or bacon. It can also be baked instead of fried.
