Red eye gravy (riffing on a theme): The traditional recipe is more sauce than gravy. Years of spending the school holidays being watched by grandma gave me a distinct idea of what gravy HAD to be, so almost every time I make a gravy flour is the thickener. Im a lazy cook and cornstarch and other thickening agents just annoy the shit out of me. As per the subtitle of this post, it wont be the same thing twice in a row, unless your diet is monotonous. Here goes: Pan drippings salt pepper flour coffee milk Tabasco or similar to taste. the method- In a fry pan add salt and pepper to the drippings and stir with a fork add flour and stir continuously until the flour starts to color and thicken and a nutty smell hits your nose continue to work the fork and slowly add the coffee and milk until you like the consistency I cant pass on any measurements for this as granny never worked that way. I just know that when your head was tall enough to see into the frypan without standing on a chair, she reckoned you were old enough to help, learn, and share the love of the cast iron skillet.
