Roaated Brussels sprouts recipe This can be made in your oven, but Im always looking for a shortcut to avoid the oven! If you find it easier, by all means, use your oven. As you know, Brussels sprouts are hard, so before I attenpt to do them in a pan, I will steam them. For those wishing to speed things up, cover the sprouts with wet paper towels and nuke them on high. Do 4 minutes and then another 4 and check if soft enough. Alternately, steam them, do not boil, in a steel colander or whatever you have, over hot boiling pot of water. Dont worry about seasoning, yet. When they seem well done or soft enough for you (I think its best to leave a bit firm) remove them. Put some EVOO in a pan. Coat your cooked Brussels sprouts with a bit more EVOO, salt, pepper and dried rosemary (or fresh, if you have). Heat the pan on hi, then put in the Brussels sprouts. Move the pan back and forth till nicely Carmelized. Then, lower to medium to low heat and cook until they look perfectly roasted. Dont overfdo it. You want them glistening, firm and not shriveled or burned. Take off heat, and put on plate or bowl. Serve alone or with your favorite main dishes! Its so yummy it makes a perfect appetizer for a party! Or just a healthy snack. Enjoy!
