Roasting peppers....so simple and so much better than their jarred counterparts! Oven version: Turn your oven on to the broiler setting. Line a baking sheet with aluminum foil and coat with cooking spray. Wash and dry as many peppers as you would like to roast. Cut off the rounded bottoms and the tops. Remove the seeds and innards. Cut the pepper in half. Place pepper halves, tops and bottoms on baking sheet, outside skin up. Spray with olive oil (I use the Misto). Place in oven and cook until the skins start to crisp up and brown. Remove sheet from oven. Place peppers into a bowl and cover with plastic wrap or my favorite, press and seal. Set aside for 30 minutes. Remove wrap and then peel off the browned skin. You may have to rinse under water to get some stubborn pieces off. Enjoy in your favorite dishes! (This can also be done on the grill. Same instructions except you would place the peppers, outside skin down, directly on the grill. Once skins have browned, remove to bowl and follow the above directions.)
