So I was cooking up some dishes for my brother and he loves Olive Gardens Pasta Fagiole Soup, I decided to attempt this on my own and make up my own recipe of it, I could do this just by having seen the soup and remembering what it had in it. So I decided to give it a try, I made a big pot of the soup up and boy is it good, if I have to say so myself....it is a good hearty soup that is great on a cold day. Here below is what I did...will take pics later to post. ingredients: 2 to 3 Tablespoons of Olive Oil 2 lbs ground beef (90 %) 2 to 3 cloves of chopped garlic, or same from jar garlic 4 to 5 carrots, sliced in 1/4 pieces 4 to 5 celery stalks, sliced in 1/4 pieces 2 onions, chopped 1 large can of whole tomatoes, crush these up also 1 large can of crushed tomatoes 1 large can Chicken Broth, quart size (I use the low sodium) 1 14 ounce cans of Cannellini beans, (rinsed and drained) 2 14 ounce cans of Red Kidney Beans (rinsed and drained) 1 teaspoon of chopped parsley Salt, pepper, red pepper to taste 1/2 teaspoon of Thyme 1 teaspoon of Basil 1 lb Ditalini macaroni When serving you can add some Parmesan Or Romano cheese on top of soup. directions: Heat a big soup pan on low heat, add hamburg and chop up some with a spoon so that it is in chunks, add about 1 cup of water, brown the meat and when browned, drain off the water & fat. Now add the Olive Oil to the pan along with the chopped garlic. Next add, the chicken broth then add the carrots, onions, celery, then add crushed tomatoes and all your spices, let cook for 1/2 hour, then add your beans. While that is still cooking on low, cook your macaroni according to the box. When it is done add it to the soup and you will have an awesome comfort dish to serve....a complete meal all in one, with your meat, beans, veggies. You could serve with Italian bread too. Enjoy! Pasta Fagiole soup is a traditional Italian dish made of pasta and beans that was born out of peasant cooking. They did not use meat in their dishes back then as they did not have much money to buy meat and when they did use it they used very little of it in their dishes. I used the ground meat in mine as I like it in soups. Hope you give it a try soon, let me know what you think!
