So, we got a couple of hours of some much needed rain today. We were starved at lunch time so I decided to make Grilled Cheese and Tomato Soup for lunch. I haven’t had that in years, mainly because they have changed the “cheese.” It (cheese) got so bad that I just stop buying it except for a few hard cheeses and quit making grilled cheese sandwiches altogether about 4 or 5 years ago. However, today I decided to get creative…I buttered four slices of bread and then for each sandwich I put a slice of Velveeta cheese with a hand full of shredded Monterey Jack Cheese and Colby Cheese in between and grilled to a golden brown. OMG! It took me back to my child hood. It is amazing how the smells and tastes of some foods can bring back memories. Anyway it was a great lunch and it didn’t cost a ridiculous $15.00 or any thing like it. I do have to add a “Thanks” to my brother Rick who sent me some Wisconsin cheeses several months ago which were added to the grilled cheese.
