Some spreads and cooking oils or ways of cooking without oil are simply more healthful, but there is much confusion as to what is the most healthful. There is particularly a pronounced scandal on the topic of canola oil and how the general public has been misled to believe that its healthy. I conducted hours and hours of research on this interesting topic, and enjoyed it very much. I gained knowledge on how olive oil should be just about almost always preferred, and how in the processing of canola oil, trans fats form. I strongly believe that these trans fats should be recognized on the label, but in the United States, this apparently doesnt appear to be required. This is very unfortunate because according to the National Academy of Sciences, there is no safe level for consumption of trans fats, and canola oil is widely used in many processed foods as well as in the cooking of many foods by the people in this country. - Brian J Halton
