Sopa de Salchichon by Bea serves up to 6 people 1 salchichón ( Goya salami) 2 medium Potatoes cut into small cubes 6 Cups water 1 Tbsp oil EVOO 1/2 Pack of goya pasta (broken in half) 1 Tbsp chopped parsley 1/2 Tsp mashed garlic or garlic powder 1/2 Tsp of onions cut 2 Envelopes sazón 2 Tbsp sofrito 1 Cup Cilantro (Rinsed and Finely chopped) 1/4 Cup tomato sauce A pinch of Oregano Salt and adobo to taste Hot sauce (few drops) if want heat Cuban bread Cut in slices 2 Bay leafs Pepper/salt to taste 1. In a soup pot, heat the oil; add the salchichón, garlic, salt or adobo, onion, cilantro,oregano, bay leafs stir fry a little on high. 2. Add the water, sazón, sofrito, tomato sauce, hot sauce, salt pepper to taste and bring to a boil. Once it boils, bring down the heat to medium (cover) 3. Last few mins of cooking Add the cubed potatoes & noodles cook for about 10 to 15 til Potatoes are soft to touch with a fork and the noodles are soft 4. Stir frequently to avoid excessive sticking, adjust water when necessary. When the noodles are fully cooked, turn the heat off. Serve with white rice and/or cuban bread Slices
