Spent the morning prepping and cooking some fresh peach butter. Its been cooking down all day and should be ready to be canned in a few more hours. Its a lot of work but SOOOOOO worth it. The yummiest of spreads in my opinion. Red Haven cling-free peaches from Belltown Orchards (in Glastonbury, CT) are the best for freezing, canning, jellying, or buttering. They are around during mid-late Aug and picking is now in its second week. Picked 31 lbs (115 peaches) last weekend which was enough to make nearly 2 dozen jars peach butter and a bunch of baby food. Now we need enough to do canned sliced and frozen varieties. Hubby is going up again this weekend, if possible, to get enough to finish.
