Sponge cake 5egg yikes 1 tbsp sugar 1tsp vanilla extract 1/4 cup water 1/4 cup oil 1 cup cake flour 1/2 tsp baking powder 5egg whites 3/4 cup sugar 1/2tsp cream of tartar Line a 9 round cake pan with parchment paper no need to flour sides. Separate eggs and let it sit till it reaches room temperature. Add in sugar to egg yolks whisk till light. Add vanilla extract and oil mix well then add water mix till combined. Sift in flour stir or fold till combined and no more lumps. Whisk egg whites and cream of tartar till foamy, gradually add in sugar in three batches and continue to beat till you get stiff peaks. Take 1/3 of the meringue and with a spatula gently fold with batter till slightly combined. Do not over mix Pour into cake pan and bake 325 for 45 min. Let cool and add whip cream and fruits.
