Teaspoon Tuesday Share ~ So how about something for dinner now?? Cauliflower Fried Rice 3 Tbsp. coconut oil 1 head cauliflower 1 small head broccoli 1 bell pepper 1 carrot 1 onion 1-2 jalapenos (optional) 1 tsp salt 2 eggs Toasted sesame oil Soy Sauce Green onion to garnish 1. If you have a food processor with grating blade, use that to grate the head of cauliflower. Steam it for 3 minutes and set aside. If you dont have a food processor, you can do basically the same thing in the blender. Put the cauliflower in with enough water to float it and use chop on the blender. The water keeps the cauliflower from turning into paste and instead makes it like little rice grains. Discard the water when done with the blender. 2. Chop the broccoli, bell pepper and carrot and set aside in a bowl. Chop the onion and jalapeno and set aside in a different bowl. 3. Lightly scramble the two eggs so that htey are about half cooked and set aside. 4. Heat the coconut oil in a large skillet or wok until it is very hot but not smoking. Put in the grated cauliflower and stir constantly, keeping the heat on high. Keep cooking like this until the cauliflower begins to brown - about 3 minutes or so. 5. Add the onion and jalapeno. Cook for several minutes until the onion starts to soften. Then add the other veggies and saute until they reach the desired level of doneness. 6. Turn off the heat and add the eggs, stirring until they finish cooking. 7. Add toasted sesame oil and soy sauce and salt to taste and stir well. 8. Garnish with chopped green onions if desired. This is SO yummy!!!!!! And - gluten free and low carb! You can substitute other veggies if you like. Lots of things work well in this like peas and/or mushrooms. Bon Appetit! (Dawn☼)
