The healthiest, long-term, plant-based diet is comprised of mostly carbohydrates and minimal fat and protein. The ideal proportion of carbohydrates, fats and proteins is 80% carbohydrates and 10% each fat and protein. The World Health Organization suggests diets contain 5-8% protein. Many vegan doctors support a macronutrient proportion of 90% carbohydrates and 5% fats and proteins. This is achieved by abstaining from all overt fats (nuts, seeds, nut and seed butters, avocados, oils, soy, etc.) and indulging in high carbohydrate foods such as fruits, vegetables and starches. (All plant foods include all macros; the 5% fats and proteins will occur naturally while eating whole foods.) Since many plant proteins are packaged with fat, keeping one’s fat low will naturally keep one’s protein low. Diets low in protein (including plant proteins) have been show to extend years of life. Diets low in fat help regulate blood sugars and body weight and reduce inflammation.
